Ground tonka beans

Tonka beans are the seeds of a tropical tree also called Mexican vanilla, in Czech we find it under the name silovoň. It replaces the vanilla pod in the kitchen. With its almond–caramel aroma, it perfectly flavors puddings, ice cream, rice milk, cookies and cakes. Due to the intense aroma and also the natural coumarin content, you should dose it with care. Beans have a very intense taste, when cooking you can just use the powder on the tip of a knife. In tonka beans, the vanilla taste is combined with a caramel, slightly rum aroma, in which you can also recognize bitter almonds.
