We present a cookbook, which is written as a tribute to the city, where many cultures meet, as well as many cuisines from different parts of the world. It contains 120 recipes for preparing interesting dishes of vegetables, legumes, meat, but also desserts, selected authors based on their taste preferences and cooking habits and also memories of how they cooked in their wider families. The authors of this book – Yotam Ottolenghi and Sami Tamimi – have not tried to document Jewish and Arabic cuisine in the city, but rather to capture their own experiences and use them in the current style of cooking.

The authors of this book, Yotam Ottolenghi and Sami Tamimi, grew up in Jerusalem in the 1970s and 1980s without knowing each other. Yotam lived in the Jewish quarter in the west of this ancient city, Sami in his Arab quarter in the east. They met in London in 1999 and became business partners at Ottolenghi, which also runs restaurants and delicatessen. Their childhood experiences served to inspire them to write this book over time. Traditional recipes have been tailored to suit the lifestyle and tastes of contemporary chefs and diners.
