Tonk beans are the seeds of a tropical tree also called Mexican vanilla, in Czech we can find it under the name silovoň.
In the kitchen, it replaces the vanilla pod, just grate the beans on a fine grater (eg nutmeg). With its almond–caramel aroma, it tastes great with pudding, ice cream, milk rice, biscuits and cakes. Due to the intense aroma and also the natural content of coumarin, you should dose it carefully. The beans are very intense in taste, when cooking you can do with the powder on the tip of the knife. The tonka beans combine the vanilla taste with a caramel, slightly rum aroma, in which bitter almonds can also be recognized. In South America, tonka beans were considered by natives to be magic beans with healing effects. They were often used as protective amulets and even served as official currency in Venezuela until the mid–1940s.
